I am super super proud of this week’s eats.
Let’s get Valentine’s Day out of the way first, though.
There was bourbon (a Bible Belt and an Old Fashioned) with sushi, pumpkin soup, duck, and tres leche cake. You know, just everything a Valentine’s Day should be.
Okay. Now onto the more balanced parts of my weekly eats.
Buffalo quinoa tofu veggie bake. Friends. This. Just. This.
This is Sour Kraut Soup. It was too Sour Kraut-y for me. Even with the apples to tone it down and the sour cream. I wasn’t a fan. Thankfully, Nathan ate on it all week for lunch. (What a trooper.)
I just adore my green protein smoothie. So much.
I am in love with this sweet and sour tofu veggie stuff. I made it again this weekend. (After I sent my Trooper Husband to the store to get what I needed for it.)
Toast, avocado, eggs, lots of pepper. Trust me.
And the chickpea quinoa salad that AshleyGee went on and on about? I ate it every day for lunch. Zero complaints.
I did all of my workouts as scheduled. I completed my daily journaling tasks for my Precision Nutrition – LeanEating program. I feel super duper on the ball.
I’m also super excited for the week of eats that lies ahead. Creativity in the kitchen makes Vegetarian-At-Home so much fun!
