the week that was – feb 3 – 9

So. This week. I have mixed feelings about it. I had some great weight workouts, but I need to get my “active recovery”/cardio days back at some sort of intensity. I’m doing a lot of Wii boxing, which I love and gets my heart pumping. But I miss being outside. And I think I would be running if it wasn’t for this snow. I’m just not motivated to get out there on the kinda treacherous roads if I’m not training for something. When running is an option but outside is uncomfortable, I’m going to go with Plan B. But I got all of my workouts in. I’m feeling good about the weight sessions. I’m doing well with the two sets, but moving to three is going to wipe. me. out. I also did the #pilatesaday, as is becoming habit, every day. I’m pretty stoked with how I’m working my workout plan.

I’ve had some hunger issues in the evenings and resorted to toast a few nights. I’m playing with that, though. And if I change my workout to later, then that keeps the hunger at bay. I’m kinda counting calories. I say kinda because I track but I don’t stress about it. I don’t workout more to be under a certain count or anything. But my toast evenings put me over where I know I am actually comfortable, so I’m working on it. It isn’t necessarily easy, but if I don’t make it hard, it just feels like an experiment to find my sweet spot.

Eats this week have been exciting, but not varied. I did some big batch cooking and we ate on them all week. So not a lot of variety, but tasty.

This date quinoa salad is amazing. Seriously, friends. It was like the heavens opened up and the angels sang every day at lunch. Yes, I had this every day last week. There was a link on NBC Latino, but it has gone down since yesterday. 😦 It is on page 89 of Vegan Eats World and completely worth a trip to the library.

I don’t know what kibbe is, but I don’t think I made it right. This was good, but waaaaay too heavy/grainy/carby for me to get excited about out. I let Nathan eat a lot of this. But the cranberry brussels were to die for. I think I had the wrong kind of bulgur. I used this recipe, and I used butternut squash instead of pumpkin.

Also on the menu is this sweet potato + brussels chili. It was super duper tasty. I also added tofu to add more protein and try to combat the toasty nights. It worked, I think.

I have the groceries needed to make two more soups for this week, so I have the feeling there won’t be a lot of variety coming up, either. That’s okay. It leaves more time on leftover weeknights.

So what awesome vegetarian dishes are in your rotation that I need to try?

  1. This isn’t fancy, but its super easy when i need something quick, and it’s super low cal. One block of Trader Joe’s organic marinated tofu, cubed; a few bags of frozen stir fry veggies (usually from Trader Joe’s); all cooked together in a dry wok with a little non-stick spray and my choice of stir fry sauce. (I cook the veggies first and add the tofu near the end) Serve over brown rice and done.
